  • 1 (9-inch) deep-dish pie shell, store-bought or homemade
  • 2 cups tomatoes, peeled and cubed (about 3 large or 4 medium tomatoes)
  • salt, to taste
  • ground black pepper, to taste
  • 1/4 cup sour cream or Greek yogurt
  • 1/4 cup mayonnaise
  • 3 ounces Brie cheese, sliced
  • 1 cup pimiento cheese
  • 12 ounces real bacon bits or 10 slices bacon, cooked and crumbled
  • green onion, optional, to taste, sliced, for garnish

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Blind-bake the pie shell by lining the crust with parchment paper and dried beans to weigh it down, until it is lightly brown, about 9 minutes.

Step 3 –Place the tomatoes on paper towels.

Step 4 –Salt the tomatoes and allow them to drain until the paper towels under them become very wet, about 3 minutes.

Step 5 –Place the tomatoes on a new layer of dry paper towels and allow them to drain until they have given up most of their moisture, about 9-10 minutes.

Step 6 –Stir the black pepper, the sour cream, and the mayonnaise together in a small bowl.

Step 7 –Line the cooked pie crust with the sliced Brie.

Step 8 –Layer the drained tomatoes onto the Brie.

Step 9 –Spread the sour cream mixture on top of the tomatoes.

Step 10 –Top the sour cream layer with the pimiento cheese and the bacon.

Step 11 –Bake until lightly browned and the cheese is melted, about 30 minutes.
