Ingredients

  • 1 1/2 pounds of ground chicken
  • 3/4 teaspoon smoked paprika
  • 1 clove of garlic, minced
  • 3 scallions, minced
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 2 tablespoons extra-virgin olive oil
  • 4 slices cheddar
  • 4 leaves of butterhead lettuce
  • 2 cups coleslaw
  • 1 avocado, thinly sliced
  • 1/4 small red onion, thinly sliced
  • 1 jalapeño, thinly sliced
  • 4 brioche burger buns, split and lightly toasted

Directions

Step 1 –In a large bowl, combine the chicken, paprika, garlic, scallions, salt, and pepper.

Step 2 –Divide the mixture into 4 patties.

Step 3 –In a large skillet over medium heat, heat the olive oil.

Step 4 –Add the chicken patties to the oil and cook, flipping once, until golden and the patties are cooked through to 165 degrees F, about 8-10 minutes.

Step 5 –Top the patties with the cheddar, covering the skillet and cooking until melted, about 2 minutes.

Step 6 –Transfer the patties to a plate.

Step 7 –Stack the lettuce, coleslaw, chicken burgers, avocado, red onion, jalapeño, and more of the coleslaw on the bottoms of the brioche buns.

Step 8 –Close the sandwiches with the top buns and serve.
