Valentine’s Salad is a sweep-them-off-their-feet romantic version of the humble salad, as befits the name. Dressed in a luxurious and bright sauce with just a touch of heat, Valentine’s Salad is as sunny as a day with your partner, with orange slices and creamy avocado. It even comes with little heart-shaped strawberry slices! This is a salad created to enchant you and your significant other just like you enchant each other!

Ingredients

For the strawberry poppy seed dressing:

  • 1 cup fresh strawberries, diced
  • 1/4 cup fresh lime juice
  • 6 tablespoons honey
  • 1 teaspoon sriracha sauce
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground black pepper
  • 1 tablespoon poppy seeds
  • 1/4 cup canola oil

For the salad:

  • 6 cups fresh greens
  • 1 medium navel orange, peeled, halved, and sliced
  • 1 medium cara cara orange, peeled, halved, and sliced
  • 1 medium blood orange, peeled, halved, and sliced
  • 1 small red onion, thinly sliced
  • 6 medium strawberries, thinly sliced
  • 1 small avocado, peeled, halved, and sliced
  • 2 ounces goat cheese, crumbled

Directions

Step 1 –Place 1 cup strawberries in a blender with lime juice, honey, sriracha, sea salt, black pepper, and poppy seeds.

Step 2 –Process on high until very smooth, about 1-2 minutes.

Step 3 –Transfer the mixture to a medium-sized bowl.

Step 4 –In a slow, steady stream while whisking vigorously, add the canola oil.

Step 5 –Taste for seasoning and set aside.

Step 6 –Place the greens on a large platter or in a salad bowl.

Step 7 –Top with the navel orange, cara cara orange, blood orange, red onion, strawberries, and avocado.

Step 8 –Sprinkle on the goat cheese and drizzle with the strawberry poppy seed dressing.
