Ingredients
- 1 1/2 pounds chicken breasts, boneless and skinless, cut into 1-inch cubes
- 1/2 pound fresh mushrooms, sliced
- 1 large onion, chopped
- 1 medium sweet red pepper, cut into 1/2-inch pieces
- 1 medium green pepper, cut into 1/2-inch pieces
- 1 (2.25-ounce) can sliced ripe olives, drained
- 1 (24-ounce) jar marinara sauce
- 1 (15-ounce) jar Alfredo sauce
- 2 (9-ounce) packages refrigerated cheese tortellini
- parmesan, optional, to taste, grated
- fresh basil, optional, to taste, torn into pieces
Directions
Step 1 –In a 5-quart slow cooker, add the chicken, the mushrooms, the onion, the red pepper, the green pepper, the olives, and the marinara sauce.
Step 2 –Cover the slow cooker and cook on low heat until the chicken is tender, about 6-8 hours.
Step 3 –Stir the Alfredo sauce and the tortellini into the chicken mixture.
Step 4 –Return the lid on the slow cooker and cook until the tortellini are tender, about 15-20 minutes.
