Ingredients

  • 1/4 cup extra virgin olive oil
  • 3 large cloves garlic, thinly sliced
  • 5 San Marzano tomatoes, peeled
  • 2 handfuls fresh spinach
  • 2 (15-ounce) cans cannellini white beans, rinsed
  • 1 tablespoon water
  • 1/2 teaspoon Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes
  • kosher salt, to taste
  • black pepper, to taste
  • 2 cups mozzarella, shredded
  • tortilla chips, to taste, for serving

Directions

Step 1 –Preheat the oven to 475 degrees F.

Step 2 –Heat the olive oil in a 10-inch ovenproof skillet over medium-high heat.

Step 3 –Add the garlic to the skillet and cook until lightly golden, about 1 minute.

Step 4 –Add the tomatoes to the garlic and mash them with a potato masher or the back of a wooden spoon.

Step 5 –Cook the tomato mixture for 1 minute.

Step 6 –Add the spinach, the cannellini beans, the water, the Italian seasoning, the crushed red pepper flakes, the salt, and the pepper to the tomato mixture and stir to combine.

Step 7 –Sprinkle the mozzarella cheese evenly over the top of the bean mixture.

Step 8 –Bake the bean mixture until the cheese has melted and starts to brown in spots, about 8-10 minutes.

Step 9 –Serve with the tortilla chips.
