- 1 tablespoon butter
- 1 small onion, chopped
- 1 tablespoon flour
- 6 cups low-sodium chicken broth
- 3 cups water
- 2/3 cup carrots, chopped
- 3 cloves garlic, minced
- 2 celery stalks, chopped
- 1/2 cup brown rice
- 14 ounces chicken thighs, boneless and skinless
- 1 (4.5-ounce) package long grain and wild rice mix with seasoning packet
- 4 ounces shiitake mushrooms, sliced
- 2 tablespoons light sour cream, optional
- salt, to taste
- pepper, to taste
- fresh parsley, optional, to taste, chopped, for garnish
Directions
Step 1 –In a large pot over medium heat, melt the butter.
Step 2 –Add the onions to the melted butter and cook, stirring occasionally, until softened but not browned, about 3-4 minutes.
Step 3 –Add the flour to the onions and cook, while whisking, until the raw flour smell disappears, about 1 minute.
Step 4 –Add the chicken broth, the water, the carrots, the garlic, the celery, the brown rice, and the chicken thighs to the pot.
Step 5 –Cover the pot and let it simmer until the flavors meld together, about 20 minutes.
Step 6 –Add the wild rice mix, the rice seasoning package, and the mushrooms to the pot and reduce the heat to low.
Step 7 –Cover the pot and simmer, stirring occasionally, on low heat until the rice is tender and the flavors have melded together, about 25 minutes.
Step 8 –Transfer the chicken thighs to a cutting board and shred them using two forks.
Step 9 –Return the shredded chicken to the pot and stir to combine.
Step 10 –Add the sour cream, the salt, and the pepper.
Step 11 –Serve garnished with the parsley.
