Ingredients
- 1 pound mild Italian sausage
- 1 cup yellow onion, chopped
- 1 pound baby/petite red potatoes, thinly sliced
- 1 green bell pepper, chopped
- 1 (15-ounce) can fire-roasted corn, drained
- 1 (14.5-ounce) can dark red kidney beans, drained and rinsed
- 1 (14.5-ounce) can fire-roasted diced tomatoes, not drained
- 2 teaspoons garlic, minced
- 1 1/4 teaspoons hot sauce, of your choice
- 1/2 cup low-sodium beef broth
- 1/2 teaspoon chili powder
- 1 cup low-fat Colby Jack cheese, finely grated
- fine sea salt, to taste
- freshly cracked pepper, to taste
- fresh cilantro, optional, for topping
- sour cream, optional, for topping
Directions
Step 1 –In a large skillet over medium-high heat, add the sausage and the yellow onion and cook until browned, about 5-7 minutes.
Step 2 –Drain the fat from the skillet.
Step 3 –Add the sausage to a large slow cooker.
Step 4 –Top the meat mixture with the thinly sliced red potatoes.
Step 5 –Add the bell pepper, the corn, the kidney beans, the undrained diced tomatoes, the minced garlic, the hot sauce, the beef broth, and the chili powder to the potato mixture.
Step 6 –Season to taste with the salt and the pepper.
Step 7 –Stir everything together and cover the slow cooker.
Step 8 –Cook until the potatoes are tender, about 3-5 hours on high or 5-7 hours on low.
Step 9 –Taste for seasoning.
Step 10 –Sprinkle the cheese over the casserole and allow it to melt.
Step 11 –Serve hot with the cilantro and the sour cream.
