Ingredients
- 1 (28-ounce) can crushed fire-roasted tomatoes
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 2 teaspoons garlic powder
- 1 teaspoon dried oregano
- 3/4 teaspoon kosher salt
- 1/2 cup water
- 18 ounces refrigerated cheese tortellini
- fresh ground black pepper, to taste
- 2 cups spinach, chopped
- 1 1/2 cups whole milk mozzarella cheese, shredded
- 1/4 cup parmesan cheese, grated
- 2 tablespoons Italian panko breadcrumbs
Directions
Step 1 –Preheat the oven to 400 degrees F.
Step 2 –In large bowl, combine the crushed fire-roasted tomatoes, the olive oil, the balsamic vinegar, the garlic powder, the dried oregano, the kosher salt, the water, the tortellini, and the fresh ground black pepper and stir to combine.
Step 3 –Place the spinach in the bottom of a baking dish.
Step 4 –Pour the sauce and the tortellini over the top of the spinach.
Step 5 –Sprinkle the mozzarella cheese and the parmesan cheese over the top of the sauce.
Step 6 –Cover the baking dish with aluminum foil and bake for 20 minutes.
Step 7 –Remove the aluminum foil from the baking pan and top the tortellini with the panko breadcrumbs.
Step 8 –Bake until browned, about 10 minutes.
Step 9 –Serve immediately.
