Ingredients
For the salad:
- 6 cups romaine lettuce, chopped
- 6 cups chicken breasts, boneless and skinless, cooked and cubed
- 1 1/2 cups fresh corn
- 1 1/2 cups black beans
- 2 tomatoes, diced
- 1 avocado, peeled and deseeded, diced
- 1/2 red onion, diced
- 3/4 cup cheddar cheese, shredded
- cilantro, to taste, chopped
- 1 cup tortilla chips, crushed, for garnish
For the dressing:
- 1/2 cup plain, non-fat Greek yogurt
- 3 tablespoons extra-virgin olive oil
- 2 teaspoons honey
- 2 teaspoons apple cider vinegar
- 1 teaspoon garlic, minced
- 2 tablespoons lime juice
- 1/2 jalapeño, finely diced
- 2 heaping teaspoons mild taco seasoning
- salt, to taste

Directions
Step 1 –In a large serving bowl, add the romaine lettuce, the chicken cubes, the corn, the black beans, the tomatoes, the avocado, the red onion, the cheddar cheese, and the cilantro and toss to combine.
Step 2 –In a medium bowl, add the Greek yogurt, the olive oil, the honey, the apple cider vinegar, the garlic, the lime juice, the jalapeño, and the taco seasoning and whisk to combine.
Step 3 –Taste the dressing and season with the salt, as needed. Whisk to combine.
Step 4 –Drizzle the dressing over the salad and toss to combine.
Step 5 –Place the bowl in the refrigerator to let the salad chill until ready to serve.
