It’s a little bit chicken, it’s a little bit zucchini, and it’s stuffed with a whole lot of zazzy flavor we are sure your whole zoo (i.e. family) will love! So, don’t zigzag around on this one. Ingredients
- 1 (6-ounce) package stuffing mix
- 3/4 cup butter, melted
- 3 cups zucchini, diced
- 2 cups chicken breast, cooked, cubed
- 1 (10.75-ounce) can condensed cream of chicken soup, undiluted
- 1 medium carrot, shredded
- 1/2 cup onion, chopped
- 1/2 cup sour cream
Directions
Step 1 –Preheat the oven to 350 degrees F.
Step 2 –Grease a 7×11-inch baking dish.
Step 3 –In a large bowl, add the stuffing mix and the melted butter and mix well.
Step 4 –In a small bowl, set aside 1/2 cup of the stuffing mix for the topping.
Step 5 –Add the zucchini, the chicken breast, the cream of chicken soup, the carrot, the onion, and the sour cream to the remaining stuffing mixture and mix well.
Step 6 –Transfer the chicken breast mixture to the prepared baking dish and evenly sprinkle with the reserved stuffing mixture.
Step 7 –Bake the casserole, uncovered, until it is golden-brown and bubbly, about 40-45 minutes.
Step 8 –Plate and serve.
