Arizona Pork Loin

Arizona Pork Loin is a national treasure that you’ll definitely want to explore. Starting off this adventure is a plump piece of pork loin roast, coated with a fanciful fajita seasoning and then sent to soak in a slow cooker of fabulous south-of-the-border flavors like fire-roasted tomatoes and fresh poblano peppers. This Arizona Pork Loin is jam-packed with aromatic scenes and dares to go the distance with your hunger as a compass.

Ingredients

  • 3 tablespoons fajita seasoning mix, divided
  • 1 (3-4-pound) pork loin roast, boneless
  • 1 tablespoon olive oil
  • 1 (14.5-ounce) can fire-roasted tomatoes, undrained
  • 1 large red onion, chopped
  • 1 1/2 cups fresh poblano peppers, seeded and chopped
  • 1/4 cup beef broth
  • 1 teaspoon chili powder
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper
  • rice, to taste, cooked and warm, for serving
  • chipotle hot sauce, to taste, for serving

Directions

Step 1 –On a large platter, evenly sprinkle 2 tablespoons of the fajita seasoning all over the pork loin roast.

Step 2 –In a large skillet over medium heat, add the olive oil.

Step 3 –Add the seasoned pork loin roast to the heated olive oil and cook, turning occasionally, until browned on all sides, about 3 minutes per side.

Step 4 –Transfer the browned pork loin roast to a 5-6-quart slow cooker.

Step 5 –In a large bowl, add the fire-roasted tomatoes, the remaining fajita seasoning, the red onion, the poblano peppers, the beef broth, the chili powder, the ground cumin, the garlic powder, and the cayenne pepper and stir to combine.

Step 6 –Pour the tomato mixture over the pork loin roast.

Step 7 –Cover the slow cooker and cook on low heat until the pork loin roast is cooked through, reading 145 degrees F when tested with a meat thermometer in its thickest part, about 3 hours.

Step 8 –Transfer the cooked pork loin roast from the slow cooker to a cutting board, and let it cool slightly.

Step 9 –With a sharp knife, cut the cooked pork loin roast into bite-sized pieces and transfer the pieces back to the slow cooker to heat through.

Step 10 –Plate the pork loin pieces with the cooked rice and the chipotle hot sauce.

Step 11 –Serve.
