Ingredients

  • 2 avocados, chopped
  • 1/4 cup red wine vinegar
  • 1 (15-ounce) can black beans, rinsed and drained
  • 1 (11-ounce) can Mexican-style corn, drained
  • 3 tomatoes, seeded and chopped
  • 3 green onions, sliced
  • 1 small red onion, chopped
  • 1/4 cup olive oil
  • 1 (0.7-ounce) package dry Italian-style salad dressing mix

Directions

Step 1 –Lightly combine the avocados with the red wine vinegar in a salad bowl.

Step 2 –Stir in the black beans, the corn, the tomatoes, the green onions, and the red onions.

Step 3 –Whisk together the olive oil and the Italian dressing mix in a bowl.

Step 4 –Pour the dressing over the salad, tossing lightly to combine.

Step 5 –Serve.
