Bagel Brunch Bake

We have the perfect morning, mid-morning, or anytime treat! This Bagel Brunch Bake has “everything” you long for in a breakfast, a brunch, or pretty much any meal. The flavor-packed everything bagels start out as the foundation of this great-day-to-be-alive bake, and then are joined with fluffy eggs, savory bacon, and creamy, melted cheese. Just wow! Ingredients

  • 4 everything bagels, toasted and chopped
  • 6 large eggs
  • 2 cups milk
  • 4 ounces Monterey Jack cheese, shredded
  • 4 slices bacon, cooked, finely chopped
  • 4 green onions, sliced, plus more, to taste, for topping
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

Step 1 –Add the chopped bagels to the bottom of a 9-inch square baking dish.

Step 2 –In a large bowl, add the eggs, the milk, the cheese, the bacon, the green onions, the salt, and the black pepper and whisk to combine.

Step 3 –Pour the egg mixture over the top of the chopped bagels and press down to slightly submerge the bagels.

Step 4 –Cover the dish tightly and transfer to the refrigerator to marinate for 1 hour and up to overnight.

Step 5 –Preheat the oven to 350 degrees F.

Step 6 –Transfer the egg mixture from the refrigerator, uncover, and bake until set, about 45-55 minutes.

Step 7 –Transfer the egg mixture from the oven to a wire rack and let cool, about 15 minutes.

Step 8 –Serve the bake topped with the extra green onions.
