Beefy Cauliflower Casserole

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup onion, chopped
  • 1 medium green bell pepper, chopped
  • 1 pound lean ground beef
  • 3 cups cauliflower florets, cut into bite-size pieces
  • 3 cloves garlic, minced
  • 2 tablespoons chili powder
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground chipotle
  • 1 (15-ounce) can no-salt-added petite-diced tomatoes
  • 2 cups extra-sharp cheddar cheese, shredded
  • 1/3 cup pickled jalapeƱos, sliced

Directions

Step 1 –Place an oven rack in the upper third position.

Step 2 –Preheat the oven broiler to high.

Step 3 –In a large oven-safe skillet, heat the oil over medium heat.

Step 4 –Add the onion and the bell pepper to the skillet and cook, while stirring, until they have softened, about 5 minutes.

Step 5 –Add the ground beef and the cauliflower to the pepper mixture and cook, while crumbling the meat, until the beef is no longer pink, about 5-7 minutes.

Step 6 –Stir the garlic, the chili powder, the cumin, the oregano, the salt, and the chipotle into the beef mixture and cook until the spices are fragrant, about 1 minute.

Step 7 –Add the tomatoes and their juices to the beef mixture, bring to a simmer, and cook, stirring occasionally, until the liquid has reduced and the cauliflower is tender, about 3 minutes.

Step 8 –Transfer the beef mixture from the heat and sprinkle with the cheese.

Step 9 –Top the cheese with the jalapeƱos.

Step 10 –Place the beef mixture in the oven and broil until the cheese has melted and browned in spots, about 2-3 minutes.

Step 11 –Serve.
