Ingredients

  • 1 cup butter, softened
  • 2 1/4 cups all-purpose flour, divided
  • 2 cups white sugar
  • 4 eggs
  • 3 lemons, juiced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –In a medium bowl, blend the butter, 2 cups flour, and 1/2 cup sugar.

Step 3 –Press the butter mixture into the bottom of an un-greased 9×13-inch pan.

Step 4 –Bake until firm and golden, about 15-20 minutes.

Step 5 –In another bowl, whisk together the remaining sugar and the remaining flour.

Step 6 –Whisk the eggs and lemon juice into the sugar/flour mixture.

Step 7 –Pour the lemon juice mixture over the baked crust.

Step 8 –Bake for 20 minutes.

Step 9 –Transfer the lemon squares from the oven and allow them to cool in the pan; they should firm up.

Step 10 –Cut into 2-inch squares and serve.
