Bountiful Blueberry Toast Bake

Ingredients

  • unsalted butter, room temperature, for greasing the baking dish
  • 6 large eggs
  • 3 cups whole milk
  • 1/3 cup sugar
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon coarse salt
  • 10 (1/2-inch-thick) slices brioche
  • 1 cup blueberries
  • confectioners’ sugar, optional, to taste, for serving

Directions

Step 1 –Using the butter, grease a shallow 2-quart baking dish.

Step 2 –In a large bowl, whisk together the eggs, the milk, the sugar, the cinnamon, and the salt.

Step 3 –Dip each of the bread slices into the egg mixture.

Step 4 –Arrange the bread in the prepared baking dish, overlapping slightly.

Step 5 –Pour the remaining egg mixture over the bread slices.

Step 6 –Cover the dish with plastic wrap and let it stand for 30 minutes or refrigerate up to overnight.

Step 7 –Preheat the oven to 325 degrees F.

Step 8 –Sprinkle the blueberries over the top of the bread slices.

Step 9 –Bake until puffed and the custard is just set, about 55 minutes-1 hour 5 minutes. Make sure to tent it with foil if it starts to brown too quickly.

Step 10 –Let the bake cool for 15 minutes.

Step 11 –Dust with the confectioner’s sugar and serve.
