Creamy Pasta Primavera

Al dente pasta joins forces with the veggie gang — zucchini, asparagus, bell peppers, cherry tomatoes, and snow peas — in a creamy parmesan sauce for a delectable pasta treat you won’t soon forget. Creamy Pasta Primavera fills in all the gaps of the great, fresh taste you crave. Remember to always eat your veggies!

Ingredients

  • 12 ounces medium pasta, such as bow tie
  • 3 tablespoons butter
  • 1 teaspoon garlic, minced
  • 1 cup zucchini, sliced
  • 1/2 cup asparagus, trimmed
  • 1/2 cup red, yellow, or orange bell pepper, diced
  • 1 cup plus 1 tablespoon chicken broth, divided
  • 1 cup heavy cream
  • 1/2 cup petite peas
  • 1/2 cup snow peas
  • 2/3 cup grape or cherry tomatoes
  • 1 1/2 tablespoons cornstarch
  • 1/2 cup parmesan cheese, grated, plus more, to taste, for garnish
  • salt, to taste
  • black pepper, to taste

Directions

Step 1 –In a pot of salted, boiling water, cook the pasta to al dente, according to the package directions. Drain and set it aside.

Step 2 –In a large skillet over medium heat, melt the butter.

Step 3 –Add the garlic to the melted butter and cook until fragrant, about 1 minute.

Step 4 –Add the zucchini, the asparagus, and the bell peppers to the garlic mixture and cook, about 1 minute.

Step 5 –Add 1 cup of the chicken broth to the vegetable mixture and bring to a simmer. Cook until the vegetables are crisp-tender, about 2-3 minutes.

Step 6 –Add the heavy cream, the petite peas, the snow peas, and the tomatoes to the vegetable mixture and simmer, about 2-3 minutes.

Step 7 –In a small bowl, add the cornstarch and the remaining chicken broth and whisk to combine.

Step 8 –Add the slurry mixture to the vegetable mixture and cook, stirring constantly, until the sauce thickens.

Step 9 –Add 1/2 cup of the parmesan cheese and the cooked pasta to the vegetable mixture and stir to combine.

Step 10 –Taste the pasta mixture and season with the salt and the black pepper, as needed, and stir to combine.

Step 11 –Serve the pasta sprinkled with the extra parmesan.
