Dressed Up Cobb

This leafy green classic is elevated thanks to the juicy strips of chicken layered on top. Of course, it’s bedazzled with all your favorite sweet and crunchy veggies, crispy bacon, and a nice, rich drizzle of creamy ranch dressing, to thoroughly impress. You’ll be living the high life every time you munch on this Dressed Up Cobb!

Ingredients

  • 1 pound chicken breasts, boneless and skinless
  • kosher salt, to taste
  • freshly ground black pepper, to taste
  • 1 cup breadcrumbs
  • 1 large egg
  • 2 tablespoons extra-virgin olive oil
  • 1 large head romaine
  • 2 cups cherry tomatoes, halved
  • 1 cup corn kernels, canned or frozen
  • 1/2 cup blue cheese, crumbled
  • 1 avocado, diced
  • 1 slice bacon, cooked and crumbled
  • ranch dressing, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a large baking sheet with parchment paper.

Step 3 –Season the chicken with the salt and the pepper.

Step 4 –In a shallow bowl, season the breadcrumbs with the salt and the pepper.

Step 5 –In a shallow bowl, beat the egg.

Step 6 –Dip the seasoned chicken in the egg, then dredge in the breadcrumb mixture until coated.

Step 7 –Place the coated chicken on the prepared baking sheet.

Step 8 –In a large oven-safe skillet over medium-high heat, heat the oil.

Step 9 –Working in batches, cook the chicken until golden, about 3-4 minutes.

Step 10 –Transfer the skillet to the oven and cook until the internal temperature of the chicken reads 165 degrees F, about 10 minutes.

Step 11 –Transfer the chicken from the oven and, once cool enough to touch, slice the chicken into strips.

Step 12 –On a serving platter, arrange the romaine and top with the tomatoes, the corn, the blue cheese, the avocado, the bacon, and the chicken.

Step 13 –Season the salad with the salt and the pepper and drizzle with the ranch.

Step 14 –Serve.
