Easy Christmas Mash

You can never have too many sides at your holiday meal! At least, that’s what we believe. Easy Christmas Mash is another one to add to your menu! Mash up some roasted butternut squash and add some rich brown sugar, lots of that beloved butter, and a bit of warm cinnamon and you’ve got yourself the tastiest yet simplest side to ever be. Easy Christmas Mash is where it’s at this holiday season! Mash it up and you’ll see!

Ingredients

  • 1 large butternut squash
  • 1 tablespoon unsalted butter, melted, plus 4 tablespoons, softened
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • salt, to taste
  • pepper, to taste

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Cut the squash in half lengthwise, then use a large spoon to scoop out and discard the seeds.

Step 3 –Place the squash halves, cut-side up, on a baking sheet and brush the tops with 1 tablespoon of the melted butter.

Step 4 –Bake the squash halves until they are tender, about 1 hour 5 minutes-1 hour 15 minutes.

Step 5 –Transfer the baking sheet from the oven and let the squash halves sit until they are cool enough to handle.

Step 6 –Scoop out the flesh from the cooled squash halves and place it into a large bowl.

Step 7 –Add the remaining 4 tablespoons of the softened butter, the brown sugar, and the cinnamon to the squash flesh and mix with an electric mixer on low speed until it is smooth.

Step 8 –Season the squash mash with the salt and the pepper and mix to combine.

Step 9 –Serve.
