Easy Mochi

It’s time to branch out in the sweetest of ways! And don’t worry… it’s easy to do. Easy Mochi combines a blend of what might seem like unusual ingredients, but don’t worry! The result is a fluffy, sweet little mound of yumminess that will make you realize just how delicious eating treats outside of your comfort zone can be! Relax and enjoy some Easy Mochi! Ingredients

  • 1 cup sweetened red bean paste
  • 1 cup glutinous rice flour
  • 1 teaspoon green tea powder (matcha)
  • 1 cup water
  • 1/4 cup white sugar
  • cornstarch, to taste, for dusting a worksurface

Directions

Step 1 –Wrap the red bean paste in aluminum foil and place it in the freezer until solid, for at least 1 hour and up to overnight.

Step 2 –In a microwave-safe bowl, mix the rice flour and the green tea powder together.

Step 3 –Stir the water and the sugar into the flour mixture and mix until smooth.

Step 4 –Cover the bowl with plastic wrap and microwave for 3 minutes 30 seconds.

Step 5 –While the flour mixture is in the microwave, transfer the red bean paste from the freezer and divide into eight equal balls.

Step 6 –Stir the flour mixture, then microwave again, covered, about 15-30 seconds.

Step 7 –Dust a work surface with the cornstarch.

Step 8 –Roll about 2 tablespoons of the hot flour mixture into a ball.

Step 9 –Flatten the ball and place one ball of the frozen red bean paste in the center.

Step 10 –Pinch and press the dough around the bean paste until completely covered.

Step 11 –Sprinkle the mochi with more of the cornstarch and place it, seam-side down, in a paper muffin liner to prevent sticking.

Step 12 –Repeat the rolling, pinching, and dusting to make the remaining mochi.

Step 13 –Serve.
