Eggnog Sweet Potato Bake

Who can say no to eggnog? The luscious, creamy, sweet beverage is so magnificent it’s a shame it’s only around for the holidays. So, let’s make the most of it! Eggnog Sweet Potato Bake uses it as part of the base of the best mashed sweet potato casserole you could imagine; the creaminess really enhances the caramel notes of the sweet potatoes. Mixed in are bursts of jammy fruit flavor from golden raisins and just a little more sugar to really blur the line between side dish and dessert. Ingredients

For the casserole:

  • 3 1/2 pounds sweet potatoes
  • 2/3 cup eggnog
  • 1/2 cup golden raisins
  • 2 tablespoons sugar
  • 1 teaspoon salt

For the topping:

  • 1/4 cup all-purpose flour
  • 1/2 cup quick-cooking oats
  • 1/2 cup brown sugar, packed
  • 1/4 cup pecans, chopped
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 2 tablespoons butter, melted

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Line a rimmed 10×15-inch baking pan with foil.

Step 3 –Grease a 7×11-inch baking dish.

Step 4 –Scrub the sweet potatoes and pierce them several times with a fork.

Step 5 –Place the potatoes on the foil-lined baking pan.

Step 6 –Bake until the sweet potatoes are tender, about 1 hour.

Step 7 –Transfer the sweet potatoes from the oven.

Step 8 –Lower the oven temperature to 350 degrees F.

Step 9 –Let the sweet potatoes cool until they can be handled safely, about 30 minutes.

Step 10 –Remove and discard the skins of the sweet potatoes and mash them in a large bowl.

Step 11 –Stir the eggnog, the raisins, the sugar, and the salt into the potatoes.

Step 12 –Transfer the sweet potato mixture to the greased baking dish.

Step 13 –In a small bowl, mix the flour, the oats, the brown sugar, the pecans, the cinnamon, and the nutmeg.

Step 14 –Stir the butter into the flour mixture and sprinkle the topping mixture over the sweet potatoes.

Step 15 –Bake, uncovered, until heated through and the topping is lightly browned, about 30-35 minutes.

Step 16 –Serve.
