Ingredients
For the casserole:
- 2 cups chicken, cooked and shredded
- 1 (8-ounce) container sour cream
- 2 cups cheddar cheese, shredded, divided
- 1 cup crispy fried onions, divided
- 1 (4-ounce) can chopped green chiles
- 1 (1-ounce) packet taco seasoning
- 3 tablespoons fresh cilantro, chopped
- 2 (10-inch) flour tortillas
Optional toppings:
- cilantro leaves, to taste
- cotija cheese, to taste
- lime wedges, to taste
- tomatoes, to taste, chopped
- lettuce, to taste, chopped
Directions
Step 1 –In a large bowl, add the chicken, the sour cream, 1/2 of the cheddar cheese, 1/2 of the fried onions, the green chiles and their juices, the taco seasoning, and 3 tablespoons of the cilantro and stir well to combine.
Step 2 –Tear 1 of the tortillas into small pieces.
Step 3 –Add the tortilla pieces to the bowl and stir again until well-incorporated.
Step 4 –In a microwave-safe pie plate, add the remaining tortilla.
Step 5 –Spoon the casserole mixture into the pie plate, on top of the tortilla.
Step 6 –Microwave the pie plate for 5 minutes.
Step 7 –Top the casserole with the remaining fried onions and the remaining cheese.
Step 8 –Microwave until the cheese is melted, about 1 minute.
Step 9 –Serve with your favorite optional toppings.
