Ingredients
- 2 tablespoons olive oil
- 12 cloves garlic, peeled
- 2 pounds potatoes, cut into 1/4-1/2-inch cubes
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 large sweet red pepper, cut into 1/2-inch pieces
Directions
Step 1 –In a large cast-iron skillet or a similar heavy skillet, heat the oil over medium-low heat.
Step 2 –Add the garlic cloves to the oil and cook, while stirring occasionally, until almost tender, about 10 minutes
Step 3 –Increase the heat to medium.
Step 4 –Stir the potatoes, the salt, and the pepper into the garlic and cook, while stirring occasionally, for 15 minutes.
Step 5 –Add the red pepper to the potato mixture and cook, while stirring, until the potatoes and the red pepper are tender, about 10 minutes.
Step 6 –Serve.
