Ingredients

For the chicken:

  • 2 eggs, lightly beaten
  • salt, to taste
  • pepper, to taste
  • 1/2 cup all-purpose flour
  • 1/2 cup cornstarch
  • vegetable oil, to taste, for frying
  • 1 1/2 pounds chicken thighs, boneless, skinless, and cut into 1-inch pieces

For the sauce:

  • 2 teaspoons vegetable oil
  • 2 teaspoons garlic, minced
  • 1/2 teaspoon red pepper flakes, crushed
  • 3/4 cup low-sodium chicken broth
  • 2 tablespoons hoisin sauce
  • 2 tablespoons brown sugar
  • 1/4 cup low-sodium soy sauce
  • 1 tablespoon cornstarch

For the garnish:

  • 2 teaspoons sesame seeds, optional
  • 2 tablespoons green onions, optional, sliced

Directions

Step 1 –Add the eggs into a mixing bowl.

Step 2 –Season the eggs with salt and pepper to taste.

Step 3 –In a separate shallow bowl, mix together the flour and cornstarch.

Step 4 –In a deep pot, heat 3 inches of oil to 350 degrees F.

Step 5 –Dip each piece of chicken into the egg mixture.

Step 6 –Coat each piece of chicken in the flour mixture.

Step 7 –Repeat the process until all of the chicken is coated.

Step 8 –In batches, fry the chicken in the heated oil until browned, about 5 minutes. Be careful not to fry too many chicken pieces at once to avoid clumping. 6-8 pieces at a time should be a good batch size.

Step 9 –Heat 2 teaspoons of the vegetable oil in a saucepan over medium heat.

Step 10 –Add the garlic and crushed red pepper flakes and cook for 30 additional seconds.

Step 11 –In a mixing bowl, whisk together the chicken broth, hoisin sauce, brown sugar, soy sauce, and cornstarch.

Step 12 –Add the liquid mixture to the saucepan and bring to a simmer.

Step 13 –Allow the sauce to thicken, cooking for 2-3 minutes.

Step 14 –Add the chicken to the saucepan and toss to coat with the sauce.

Step 15 –Sprinkle the chicken with sesame seeds and green onions and serve.
