Grandmother’s Special Pancakes

Grandmother makes these pancakes special for the grandchildren, and she hopes you’ll share it with the people you love most, too! Grandmother’s Special Pancakes are fluffy, sweet, and tangy, pan-fried to a golden-brown, and ready to warm your heart and fill your tummy! Better yet, Grandmother’s Special Pancakes have bursts in the form of bright, tart blueberries cooked right into each circle of pancake fun! These will make you feel like a kid again!

Ingredients

  • 2 1/4 cups all-purpose flour
  • 1 1/2 tablespoons sugar
  • 2 1/4 teaspoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon kosher salt
  • 1 cup whole milk
  • 1 cup sour cream
  • 2 large eggs
  • 3 tablespoons unsalted butter, melted, plus 2 tablespoons, cold, divided
  • 1 cup fresh blueberries
  • 1/4 cup maple syrup

Directions

Step 1 –In a large bowl, add the flour, the sugar, the baking powder, the baking soda, and the salt and whisk to combine.

Step 2 –In a large glass measuring cup or a separate bowl, whisk together the milk, the sour cream, the eggs, and 3 tablespoons of the melted butter.

Step 3 –Pour the wet ingredients mixture into the dry ingredients mixture and stir with a rubber spatula just until moist.

Step 4 –Lightly coat a griddle or a nonstick skillet over medium heat with the remaining cold butter.

Step 5 –In batches, pour 1/4 cup of the batter onto the hot griddle.

Step 6 –Immediately sprinkle the pancake with a generous amount of the blueberries, making sure to reserve enough of the blueberries for the remaining batter.

Step 7 –Cook the pancake until bubbles appear on top and the underside is nicely browned, about 2 minutes.

Step 8 –Flip and cook the pancake on the other side until browned, about 1-2 minutes.

Step 9 –Transfer the cooked pancake to a plate and repeat the cooking process with the remaining batter and the remaining blueberries.

Step 10 –Serve the pancakes immediately with the maple syrup.
