Healthy Breakfast Muffins

Ingredients

  • 1/2 cup almond meal
  • 1/2 cup flaxseed meal
  • 1/2 cup oat bran
  • 1/2 cup spelt flour
  • 1/2 cup whole wheat flour
  • 1/3 cup brown sugar
  • 2 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 egg
  • 1 egg white
  • 3/4 cup buttermilk
  • 1/2 cup applesauce
  • 2 ripe bananas, mashed
  • 1 cup walnuts, chopped
  • 1/2 cup raisins

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Thoroughly grease a 12-count muffin pan with the butter.

Step 3 –In a large bowl, mix the almond meal, the flaxseed meal, the oat bran, the spelt flour, the whole wheat flour, the brown sugar, the baking soda, and the baking powder together.

Step 4 –In a separate bowl, beat the egg and the egg white together.

Step 5 –Add the egg mixture, the buttermilk, the applesauce, and the bananas to the dry ingredient mixture and stir together. Be sure not to overmix.

Step 6 –Stir the walnuts and the raisins into the batter.

Step 7 –Scoop the batter into the prepared muffin cups.
