Healthy Honey Baked Apples

Ingredients

  • 2 medium tart apples
  • 1/4 cup dried cranberries
  • 2/3 cup water
  • 1/4 cup brown sugar, packed
  • 1 tablespoon honey
  • vanilla ice cream or sweetened whipped cream, to taste, for serving

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease an 8×4-inch glass loaf pan.

Step 3 –Core the apples and peel the top third portions, leaving the bottoms intact.

Step 4 –Place the apples into the prepared pan and top the apples with the cranberries.

Step 5 –In a small saucepan, combine the water, the brown sugar, and the honey and cook over medium heat, stirring frequently, until the sugar has dissolved.

Step 6 –Pour the sugar mixture over the apples.

Step 7 –Bake the apples, uncovered, basting them occasionally with the apple juices, until the apples are tender, about 35-40 minutes.

Step 8 –Serve the baked apples with the ice cream.
