The flavorful, succulent rib-eye steaks, one of the most prime cuts of steak around, are rubbed in a zesty, spicy seasoning mix and grilled until charred perfection. But then, Jackie Kennedy’s Spicy Rib-Eyes truly make this steak White House-ready by topping them with homemade lime-butter for a delicate contrasting tang and added richness. You can’t say no to these steaks… it would be unconstitutional!
Ingredients
- 4 tablespoons unsalted butter, softened
- 1 small clove garlic, minced
- 1/4 teaspoon lime zest, plus 1 tablespoon fresh lime juice
- 1 1/2 teaspoons kosher salt, plus more, to taste
- 1 1/2 teaspoons sweet paprika
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons chipotle powder
- 4 (12-ounce, 1-inch-thick) rib-eye steaks, boneless
- oil, to taste, for greasing the grill grates
Directions
Step 1 -Preheat a grill or a grill pan on the stovetop to medium-high heat.
Step 2 -In a small bowl, add the butter, the garlic, the lime zest, the lime juice, and the extra salt and stir to combine.
Step 3 -In a separate bowl, add the paprika, the cumin, the chipotle powder, and the remaining 1 1/2 teaspoons of the salt and stir to combine.
Step 4 -Rub the spice mixture all over each of the steaks.
Step 5 -Using the oil, grease the grill grates.
Step 6 -Add the steaks to the hot grill and cook, turning once, until they are slightly charred and reach an internal temperature of 135 degrees F for medium-rare, about 12 minutes.
Step 7 -Transfer the steaks to a plate and top them with the lime-butter.
Step 8 -Let the steaks rest for at least 3-4 minutes.
Step 9 -Serve.
