Ingredients
- 8-10 chicken breast halves, boneless and skinless
- 1 cup apricot-pineapple preserves
- 1/3 cup Dijon mustard
- 2 teaspoons lemon rind, grated
- 1/3 cup fresh lemon juice
- 1/2 teaspoon dried thyme
- 1/2 teaspoon pepper
- 1/2 teaspoon kosher salt, optional
- 1 lemon, sliced
Directions
Step 1 –Preheat the oven to 375 degrees F.
Step 2 –Cut the chicken into serving-size pieces and arrange them in a 9×13-inch baking dish.
Step 3 –Combine the preserves, the mustard, the lemon rind, the lemon juice, the thyme, the pepper, and the salt in a medium-sized bowl, whisking until smooth.
Step 4 –Pour the sauce mixture over the chicken.
Step 5 –Place a lemon slice on each piece of chicken or evenly cover the baking dish with the slices.
Step 6 –Bake until cooked through at 165 degrees F internally, about 30 minutes.
Step 7 –Serve hot.
