Louisiana Dirty Rice

Louisiana Dirty Rice isn’t actually dirty by any stretch. In fact, the reason that it looks dirty is exactly why it’s so tasty! It got the name because the rice is mixed with little bits of ground beef and ground pork sausage, making each bite a savory marvel! The rice itself is cooked in chicken broth to really sell the meaty flavor, then seasoned with some Cajun favorites to elevate the experience of eating it. Louisiana Dirty Rice can be a meal all on its own, but you can also serve it with other Southern classics like fried chicken, catfish, or seafood au gratin. Plain rice just can’t compete with this.

Ingredients

  • 1 tablespoon bacon grease or cooking oil
  • 1 pound ground beef
  • 1 pound ground pork sausage
  • 3/4 cup green bell pepper, diced
  • 3/4 cup yellow onion, diced
  • 1/4 cup celery, diced
  • 1 tablespoon dried oregano
  • 2 teaspoons dried thyme
  • 2 teaspoons garlic, minced
  • 1 1/2 teaspoons salt
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon cayenne pepper
  • 1/4 cup flour
  • 2 cups chicken broth
  • 3 bay leaves
  • 4-5 cups rice, cooked with chicken broth
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1 –In a large skillet, heat the bacon grease.

Step 2 –Add the ground beef and the sausage to the grease, and brown the meat, crumbling as it cooks, about 5-7 minutes.

Step 3 –As the meat begins to brown, add the diced bell pepper, the onion, and the celery to the skillet.

Step 4 –When the meat is fully browned, stir the oregano, the thyme, the garlic, the salt, the chili powder, the black pepper, and the cayenne pepper into the meat mixture, mixing well.

Step 5 –Add the flour to the meat mixture and mix well, making sure the flour coats the meat.

Step 6 –Add the chicken broth and the bay leaves to the meat mixture, scraping the bottom of the pan to loosen any of the browned bits.

Step 7 –Allow the mixture to simmer, about 5-8 minutes.

Step 8 –Fold the rice and the parsley into the meat mixture and simmer for 5 minutes.

Step 9 –Serve.
