There was one part of school lunches we can all look back on with fondness—those fudgy, chocolatey brownies with the extra creamy frosting on top. Every lunch tray looked that much more appetizing, whether it was chili day or not. These Lunch Lady Brownies recapture the magic of those schoolyard sweets; every luscious bite of Lunch Lady Brownies transports you back in time to sunny days.

Ingredients

For the brownies:

  • 1 cup butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 2 cups self-rising flour
  • 2 cups granulated sugar
  • 4 large eggs
  • 4 teaspoons vanilla extract

For the chocolate frosting:

  • 1/4 cup butter, softened
  • 1/4 cup milk
  • 1/4 cup unsweetened cocoa powder
  • 3 cups powdered sugar

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Line a 9×13 inch baking pan with foil and spray the foil with non-stick cooking spray.

Step 3 –Set aside.

Step 4 –Add the melted butter and cocoa powder into the bowl of your electric stand mixer or a normal mixing bowl. Blend the ingredients together until smooth.

Step 5 –Add the sugar and flour into the bowl, and beat together.

Step 6 –Add the eggs and vanilla extract.

Step 7 –Mix until it is combined and the batter is thick, making sure to not over mix it.

Step 8 –Pour the batter into the prepared baking pan and spread evenly.

Step 9 –Bake until cooked to your desired doneness, about 25-30 minutes. You will know it is ready when you insert a toothpick into the center and it comes out clean.

Step 10 –Remove the brownies from the oven and let them sit for at least 15 minutes before adding any frosting.

Step 11 –While the brownies are cooking, mix the softened butter, milk, cocoa powder, and powdered sugar together until smooth.

Step 12 –Spread evenly onto the brownies and serve!
