One-Pot Beef & Mushroom Stroganoff

One-Pot Beef Stroganoff provides all the warm and cozy feelings of comfort food in just 30 minutes! Each bite contains tender chunks of beef, sautéed mushrooms, creamy sauce, and buttery noodles. One-Pot Beef Stroganoff is a hearty dish that is easy to make and jam-packed with savory flavor. Combined with the ease of one-pot clean-up, you have everything you need for a satisfying meal.

Ingredients

  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/2 pounds ground beef
  • 8 ounces fresh button mushrooms
  • freshly cracked pepper, to taste
  • 2 tablespoons all-purpose flour
  • 2 cups beef broth
  • 8 ounces wide egg noodles
  • 1/3 cup sour cream
  • fresh parsley, optional, to taste for garnish

Directions

Step 1 –Add the garlic and butter to a large pot or skillet. Sauté over medium heat until the garlic is soft and fragrant, about 1 minute.

Step 2 –Add the ground beef to the skillet and continue to sauté until it is fully browned, about 6-8 minutes.

Step 3 –While the beef is browning, slice the mushrooms.

Step 4 –Once the beef has browned, add the sliced mushrooms and freshly cracked pepper to the pot.

Step 5 –Continue to sauté until the mushrooms are soft, about 5 minutes.

Step 6 –Add the flour and sauté until the raw flour smell dissipates, about 2 minutes. The flour will coat the bottom of the pot and this is okay.

Step 7 –Add the beef broth to the pot and stir to dissolve the flour off of the bottom.

Step 8 –Add the uncooked egg noodles.

Step 9 –Place a lid on the pot and allow the liquid to come up to a boil.

Step 10 –As soon as it reaches a boil, give the pot a stir, replace the lid, and reduce the heat to low.

Step 11 –Allow the pot to simmer, stirring the noodles and replacing the lid every couple of minutes, until most of the liquid is absorbed and the pasta is tender, about 7-10 minutes. Make sure the liquid is simmering the entire time. If not, increase the heat slightly.

Step 12 –Once the noodles are tender, stir in the sour cream.

Step 13 –Roughly chop the parsley leaves and sprinkle them over top.

Step 14 –Serve hot.
