Ingredients
- 1 pound ground spicy Italian sausage
- 1/2 cup yellow onion, diced
- 4 cups chicken broth
- 2 (14.5 ounce) cans diced tomatoes, with Italian herbs, undrained
- 1/4 teaspoon pepper
- basil or cilantro, optional, to taste
- 6 ounces lasagna noodles, broken into 1-2 inch pieces
- 1/2 cup parmesan cheese, grated
- 1 1/2 cups whole milk ricotta cheese
Directions
Step 1 –In a 5 quart dutch oven, cook the Italian sausage and onion, stirring occasionally, until the onion is tender and the sausage is brown, about 8 to 10 minutes over medium heat.
Step 2 –Drain the dutch oven.
Step 3 –Stir in the chicken broth, pepper, diced tomatoes, desired herbs, and lasagna noodles.
Step 4 –Heat the soup to a boil.
Step 5 –Reduce the heat, cover, and let simmer for 10 minutes, stirring occasionally, until the pasta is tender.
Step 6 –Top with parmesan, ricotta cheese, and your favorite spices and herbs.
Step 7 –Serve warm!
