Parmesan Angel Hair Pasta

Ingredients

  • 8 ounces angel hair pasta
  • 1/4 cup extra virgin olive oil
  • 3 cloves garlic, sliced
  • 1/8 teaspoon chili pepper flakes
  • 2 tablespoons fresh herbs such as rosemary, thyme, or oregano, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon black pepper, freshly ground

Directions

Step 1 –In a large pot of salted, boiling water, cook the angel hair pasta to al dente, according to the package directions.

Step 2 –While you’re waiting for the water to boil for the pasta, in a small saucepan over medium heat, add the olive oil.

Step 3 –Add the sliced garlic, the chili pepper flakes, the finely chopped herbs, and the chopped parsley to the heated olive oil and cook until the parsley wilts and the garlic emits a strong fragrance, about 1 minute.

Step 4 –Transfer the saucepan from the stovetop to cool slightly.

Step 5 –Reserve 1/2 cup of the pasta cooking water once the pasta reaches al dente.

Step 6 –Drain the pasta and rinse it just briefly with cold water to stop the cooking process.

Step 7 –Transfer the pasta to a large serving bowl. The pasta should still be quite warm.

Step 8 –Add the garlic mixture to the cooked pasta and gently toss to combine.

Step 9 –If the pasta mixture is sticky, add 1 teaspoon of the reserved pasta water at a time until loosened.

Step 10 –Add the parmesan cheese and the freshly ground black pepper to the pasta mixture and gently toss to combine.

Step 11 –Plate and serve immediately.
