Ravishing Radish Salad isn’t just using radish in the name of alliteration. Oh no, it uses so many radishes. All sorts of aromatic, sweet, crisp radishes of different varieties and flavor profiles all come together to make a salad you’ll never forget (and never want to)! Microgreens and simple olive oil as a dressing help accent the radishes without taking any attention away from them. It makes sense for this Ravishing Radish Salad to put the humble radish front and center!

Ingredients

  • 1 watermelon radish, sliced very thin
  • 1 purple daikon radish, sliced very thin
  • 1 green meat radish, sliced very thin
  • 4 small red radishes, sliced very thin
  • 2 tablespoons olive oil
  • 1 teaspoon flaky sea salt
  • 2 ounces parmesan cheese, shaved
  • 2 tablespoons pistachios, chopped
  • 2 tablespoons microgreens
  • black sesame seeds, to taste

Directions

Step 1 –In a large bowl, add the watermelon radish, the daikon radish, the green meat radish, the red radish, the olive oil, and the salt, and toss until well-coated.

Step 2 –Allow the salad to sit for 5 minutes.

Step 3 –Add the parmesan cheese to the salad and gently toss to combine.

Step 4 –Arrange the radish salad on a large plate.

Step 5 –Sprinkle the pistachios, the microgreens, and the sesame seeds on top of the radish salad.

Step 6 –Serve.
