Roasted Savory Sweet Potatoes

Ingredients

  • 2 sweet potatoes, peeled and sliced into uniform pieces
  • 2 teaspoons garlic, minced
  • 1 tablespoon olive oil
  • 2 tablespoons butter, melted
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon fresh cracked pepper
  • 4 tablespoons parmesan cheese, plus more to taste, grated
  • 1/2 teaspoon Italian seasoning
  • fresh thyme, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Lightly butter a 9×13-inch baking dish.

Step 3 –Place the sweet potato slices, the garlic, the olive oil, the butter, the garlic salt, the cracked pepper, 4 tablespoons of the parmesan cheese, and the Italian seasoning in a plastic resealable bag and shake to coat the potatoes well.

Step 4 –Arrange the coated sweet potatoes in the prepared baking dish.

Step 5 –Sprinkle the potatoes with the thyme and the extra parmesan cheese.

Step 6 –Bake the sweet potatoes until they are tender, about 30-35 minutes.

Step 7 –Garnish the sweet potatoes with the thyme and serve warm.
