Scalloped Cabbage

Ingredients

  • 1/2 medium head cabbage, chopped
  • 3 tablespoons vegetable oil
  • 3 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • pepper, to taste
  • 1 cup whole milk
  • 1 cup cheddar cheese, shredded
  • 3/4 cup breadcrumbs
  • 2 tablespoons butter, melted
  • chives, optional, to taste and minced

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Grease a 2-quart baking dish.

Step 3 –Place the cabbage in the prepared baking dish.

Step 4 –In a saucepan over medium heat, warm the oil.

Step 5 –Whisk the flour, the salt, and the pepper into the oil until smooth.

Step 6 –Gradually whisk the milk into the flour mixture.

Step 7 –Bring the flour mixture to a boil and cook, while stirring, until thickened, about 1-2 minutes.

Step 8 –Stir the cheese into the roux mixture.

Step 9 –Pour the cheese mixture over the cabbage.

Step 10 –In a small bowl, combine the breadcrumbs and the butter and sprinkle over top of the cabbage.

Step 11 –Bake, uncovered, until bubbly, about 20-30 minutes.

Step 12 –Garnish with the chives and serve immediately.
