Simple Chicken Cordon Bleu takes the French classic and simplifies it: you get everything you’re looking for, from the savory ham and melty Swiss cheese tucking in juicy chicken cutlets. All over top is a crunchy breadcrumb topping baked to a golden-brown… isn’t that just enchanting? Simple Chicken Cordon Bleu might have simple in the name but it’s far from that in terms of taste!

Ingredients

  • 4 tablespoons plain yogurt
  • 1 tablespoon Dijon mustard
  • salt, to taste
  • pepper, to taste
  • 4 (6-8-ounce) chicken breast cutlets
  • 8 slices deli ham
  • 6 slices deli Swiss cheese
  • 2 tablespoons plain breadcrumbs
  • cooking spray, to taste

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –In a mixing bowl combine the yogurt, the mustard, the salt, and the pepper.

Step 3 –In a 9×13-inch baking dish lay the chicken cutlets down in an even layer.

Step 4 –Pour the yogurt mixture evenly over the chicken.

Step 5 –Top the chicken with the ham and then the cheese slices.

Step 6 –Spoon the breadcrumbs evenly over the tops of the cheese.

Step 7 –Spray the breadcrumbs with the cooking spray.

Step 8 –Bake until the chicken reaches 165 degrees F in the thickest part, about 25 minutes.

Step 9 –Let rest for 5 minutes.

Step 10 –Serve.
