Sisi’s Italian Soup

Buongiorno (good day)! Please be prepared for your kitchen to be filled with old world excellence! You can almost smell all the smells of Sisi’s Italian Soup filling the air. Loaded with hearty ground turkey, juicy, diced tomatoes, and al dente macaroni noodles in a seasoned broth, you just don’t get any more homestyle than this! Sisi’s Italian Soup is a healthy and delicious choice for lunch, dinner, or any time in between. Say arrivederci (until we meet again) to lackluster soups! Godere (enjoy)!

Ingredients

  • 1 pound ground turkey
  • 1/2 white onion, diced
  • 4 cloves garlic, minced
  • 1 (28-ounce) can diced tomatoes
  • 1/2 cup ketchup
  • 4 cups chicken broth
  • 1 1/2 tablespoons Italian seasoning
  • 1 cup pasta, such as cellentani or elbow

Directions

Step 1 –In a large skillet over medium-high heat, add the ground turkey and cook, while crumbling, until it is no longer pink, about 5-7 minutes. Drain the excess grease.

Step 2 –Add the cooked ground turkey to a slow cooker.

Step 3 –In the same skillet over medium heat, add the onions and cook until they are translucent.

Step 4 –Add the garlic to the onions and cook until they are browned, about 2-3 minutes.

Step 5 –Add the onion mixture to the cooked ground turkey in the slow cooker and stir to combine.

Step 6 –Add the diced tomatoes and their juices, the ketchup, the chicken broth, and the Italian seasoning to the ground turkey mixture and stir to combine.

Step 7 –Cook the soup on low heat, stirring frequently, about 5 hours 30 minutes-7 hours 30 minutes.

Step 8 –Add the pasta to the soup and stir to combine. Cook in the slow cooker until the noodles are tender, about 30-45 minutes.

Step 9 –Serve.
