Ingredients
- 2 1/2 tablespoons olive oil, divided
- 4 sausages, fully cooked, sliced into circles 1/4-inch thick
- 2 medium zucchini, sliced
- 1 onion, cut into 3/4 inch pieces
- 1 bell pepper, any color, cut into 3/4-inch pieces
- 1/4 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/4 teaspoon onion powder
- 1/4 teaspoon pepper
- 1/2 teaspoon salt
- 1 teaspoon garlic, minced
- fresh basil, optional, for garnish
Directions
Step 1 –Heat up 1 tablespoon of the oil in a skillet over a medium-high-heat.
Step 2 –Once the oil is hot, add in the chopped up sausage and sautè, flipping the sausage until the sausage has some browning, about 3 minutes.
Step 3 –Transfer the sausage from the pan and set it aside.
Step 4 –Lower the heat to medium and add in the remaining 1 1/2 tablespoons of the olive oil into the skillet together with the zucchini, onion, and bell pepper.
Step 5 –Sprinkle the vegetables with the garlic powder, oregano, basil, onion powder, pepper, and salt. Stir it evenly.
Step 6 –Allow the mixture to cook until the onion is translucent and soft and the peppers and zucchini are near tender, about 5 minutes.
Step 7 –Add the browned sausage and minced garlic into the skillet, stirring and then covering the dish.
