Southern Crack Home Fries

These aren’t ordinary home fries. Oh no, these are Southern Crack Home Fries! These are special. The potatoes are tender on the inside and just so wonderfully golden-brown and crispy on the outside. Those potatoes are paired with bright bell peppers, savory onions, and fragrant garlic before being seasoned with Creole seasoning for fantastic zest! Southern Crack Home Fries is made for breakfast, but that won’t stop you from wanting them for lunch and dinner!

Ingredients

  • 2 tablespoons vegetable oil
  • 1 1/2 pounds Yukon gold potatoes, diced into 1/2-inch pieces
  • 2 bell peppers, color of your choice, diced into 1/2-inch pieces
  • 1 cup white onion, diced into 1/2-inch pieces
  • 2 cloves garlic, minced
  • 2 tablespoons salted butter
  • 1 teaspoon Creole seasoning
  • 1/4 teaspoon black pepper
  • salt, to taste

Directions

Step 1 –Place a 12-inch cast-iron skillet over medium-high heat.

Step 2 –Add the oil to the skillet and swirl it in the pan to coat the bottom.

Step 3 –Add the potatoes, the bell peppers, and the onion, tossing them in the oil.

Step 4 –Cover the skillet and cook, stirring every few minutes and making sure to scrape the bottom of the skillet to prevent sticking, until the potatoes are cooked through, about 20 minutes.

Step 5 –Turn the burner to high and add the garlic, the butter, the Creole seasoning, and the black pepper, stirring to combine.

Step 6 –Cook until the potatoes are slightly charred, about 5 minutes.

Step 7 –Add the salt and stir.

Step 8 –Serve immediately.
