It starts with a bed of fresh mixed greens, sweet summertime strawberries, hearty sliced avocado, and crispy crumbled bacon. On top is a drizzle of a creamy, dreamy dressing that’s sure to delight. Ingredients
For the dressing:
- 1/4 cup plain Greek yogurt
- 1/4 cup mayonnaise
- 2 tablespoons white vinegar
- 1 tablespoon sugar
- 1 teaspoon poppy seeds
- salt, to taste
- pepper, to taste
For the salad:
- 3 cups baby spinach
- 3 cups romaine lettuce or other crispy greens
- 10 slices of bacon, cooked crisp and crumbled
- 2 cups strawberries, washed and quartered
- 1 ripe avocado, sliced
- 1/4 cup almonds, sliced
Directions
Step 1 –In a medium bowl, whisk together the Greek yogurt, mayonnaise, white vinegar, sugar, poppy seeds, salt, and pepper.
Step 2 –In another medium-sized bowl, combine the baby spinach and romaine lettuce.
Step 3 –Divide the mixed greens between two big plates.
Step 4 –Top each plate with equal portions of the bacon, strawberries, avocados, and sliced almonds.
Step 5 –Drizzle both salads with the dressing.
Step 6 –Serve.
