Woo but these potatoes have some kick to them! Kickin’ Potato Wedges are maybe the simplest and tastiest kind of homemade oven fries: just coat and roast! But the flavor is far from simple; they’re crispy on the outside, fluffy on the inside, and dancing with spicy cayenne and smoky paprika flavors. These are the kind of side dishes that would make a wonderful accompaniment to homemade burgers… or you could just serve them up with a spicy aioli. Ingredients
- 2 pounds Russet potatoes
- 2 1/2 tablespoons olive oil
- 1 teaspoon cayenne pepper
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 3/4 teaspoon salt
- 1/4 teaspoon black pepper
Directions
Step 1 –Preheat the oven to 390 degrees F and place a tray in as it heats.
Step 2 –Slice the potatoes into wedges.
Step 3 –Add the potatoes, the olive oil, the cayenne pepper, the paprika, the garlic powder, the onion powder, the salt, and the black pepper to a mixing bowl and toss to combine. Don’t leave the potatoes sitting for too long or they will become soggy.
Step 4 –Place the wedges on the hot oven tray, careful to give them as much space as possible between them. If necessary, use two trays.
Step 5 –Bake, flipping halfway through and turning the tray, until golden, crispy, and very lightly charred, about 35-40 minutes.
Step 6 –Serve immediately.
