Ingredients

  • 1/4 cup sugar
  • 2 tablespoons canola oil
  • 1 large egg, room temperature
  • 3 tablespoons honey
  • 3/4 teaspoon vanilla extract
  • 1 cup plus 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon ground cinnamon
  • 1/8 teaspoon salt

Directions

Step 1 –In a small bowl, beat the sugar and the oil until fully mixed.

Step 2 –Beat in the egg, then beat in the honey and the vanilla.

Step 3 –Combine the flour, the baking powder, the cinnamon, and the salt. Gradually add this mixture to the sugar mixture, and stir well to combine until the dough is stiff.

Step 4 –Cover and refrigerate for at least 2 hours.

Step 5 –Preheat the oven to 350 degrees F.

Step 6 –Drop the dough in tablespoonfuls, 2-inches apart, onto a greased baking sheet.

Step 7 –Bake until the bottoms are lightly browned, about 8-10 minutes.

Step 8 –Cool for 1 minute before removing the cookies from the pan to a wire rack.

Step 9 –Serve, and enjoy!
