Tortellini Caprese Salad

Ingredients

  • 20 ounces cheese tortellini, uncooked
  • 1 cup spinach, chopped
  • 10 ounces cherry tomatoes, halved
  • 8 ounces mozzarella pearls
  • 1/4 cup basil, chopped
  • 3 cloves garlic, minced
  • 1/2 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 3/4 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • balsamic glaze, optional, to taste

Directions

Step 1 –In a large pot of boiling salt water, cook the tortellini to al dente according to the package directions.

Step 2 –Drain the water and then rinse the tortellini with cool water until the pasta is slightly cool, about 5-10 seconds.

Step 3 –In a medium bowl, add the tortellini, the spinach, the tomatoes, the mozzarella, the basil, and the garlic.

Step 4 –Add the olive oil, the balsamic vinegar, the Italian seasoning, the salt, and the pepper to the pasta mixture and toss well to combine.

Step 5 –Chill the pasta salad until ready to serve.

Step 6 –Before serving, toss the salad well to redistribute the olive oil at the bottom of the bowl. Add more of the olive oil to the salad if it seems too dry.

Step 7 –Drizzle the salad with the balsamic glaze.

Step 8 –Serve.
