Touchdown Tot-chos

WOOOOO! It’s the game-winning score… the snack-score that is! Touchdown Tot-chos replace the traditional tortilla chips with these fluffy on the inside, crispy on the outside tater tots. Now isn’t that just the best idea already? And that’s before piling them high with savory chicken and bacon, creamy avocado, a rich cheese sauce, and vibrant tomatillos! Touchdown Tot-chos are worthy of a victory dance!

Ingredients

  • 1 (16-ounce) package frozen potato tots
  • 2 ripe avocados, halved
  • 4 fresh tomatillos, husks removed, halved
  • fresh cilantro, to taste, chopped
  • 1/2 cup fresh lime juice
  • 1 teaspoon ground cumin
  • 2 teaspoons kosher salt, divided
  • 1 teaspoon ancho chili powder
  • 3 cups rotisserie chicken, cooked and shredded
  • 4 slices bacon, cooked and chopped
  • 1 (8-ounce) container white cheese dip, warmed
  • 2 cups corn kernels, charred
  • 1/3 cup tomato, diced
  • 2 jalapeños, thinly sliced

Directions

Step 1 –Prepare the potato tots according to the package directions.

Step 2 –In a blender, add the avocados, the tomatillos, the cilantro, the lime juice, the cumin, and 1 teaspoon of the salt and process until smooth, about 3 minutes. Make sure to scrape down the sides of the bowl as needed.

Step 3 –In a small bowl, add the remaining salt and the ancho chili powder and stir to combine.

Step 4 –Sprinkle the ancho chili-salt mixture over the hot potato tots.

Step 5 –Top the tots with the shredded chicken and the bacon pieces.

Step 6 –Drizzle the top of the tot-chos with the warm cheese dip and the avocado mixture.

Step 7 –Top the tot-chos evenly with the corn, the tomatoes, and the jalapeños.
