Unexpected Coleslaw

Ingredients

  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 2 teaspoons sugar
  • kosher salt, to taste
  • ground black pepper, to taste
  • 1/4 cup extra-virgin olive oil
  • 1 small or 1/2 large head red cabbage, finely shredded
  • 1/3 cup fresh parsley, chopped
  • 6 scallions, chopped
  • 2 cups red grapes, seedless, chopped

Directions

Step 1 –In a large bowl, add the apple cider vinegar, the Dijon mustard, the sugar, the salt, and the black pepper and whisk to combine.

Step 2 –Gradually whisk the oil into the dressing mixture until it is well-blended.

Step 3 –Add the shredded cabbage, the parsley, the scallions, and the grapes to the dressing mixture and toss to coat.

Step 4 –Cover the bowl and place in the refrigerator to marinate before, for at least 1 hour and up to 4 hours.

Step 5 –Serve.
