These roasted beets are the star of any dinner time show, coated in a zesty orange and lime juice mix that adds a refreshingly citrusy kick. But it doesn’t stop there, creamy goat cheese crumbles are sprinkled on top, bringing a rich and tangy element that perfectly complements the earthy sweetness of the beets. Ingredients

  • 3 medium golden beets, washed, tops trimmed by 1-inch
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1/2 teaspoon fine sea salt
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon fresh sage, minced
  • 1 clove garlic, minced
  • 1 teaspoon orange zest, grated
  • 3 tablespoons goat cheese, crumbled
  • 2 tablespoons sunflower kernels

Directions

Step 1 –Preheat the oven to 400 degrees F.

Step 2 –Place the beets on two layers of heavy-duty aluminum foil and fold the foil around the beets, sealing the foil tightly.

Step 3 –Place the foil-wrapped beets on a baking sheet and roast until they are tender, about 55 minutes-1 hour 5 minutes.

Step 4 –Carefully open the foil and allow the steam to escape.

Step 5 –Once the beets have cooled enough to handle, peel, halve, and slice them.

Step 6 –Add the sliced beets, the lime juice, the orange juice, and the salt to a serving bowl and toss to coat.

Step 7 –In a small bowl, combine the parsley, the sage, the garlic, and the orange zest and sprinkle it over the beets.

Step 8 –Sprinkle the goat cheese and the sunflower kernels onto the top of the beets.

Step 9 –Serve warm or chilled.
