Ingredients
- 3 slices bacon
- 1 head cauliflower, cut into bite-size pieces
- 1/2 teaspoon ground pepper
- 1/4 teaspoon salt
- 1 1/4 cups sharp cheddar cheese, shredded, divided
- 2/3 cup sour cream
- 4 scallions, sliced, divided
Directions
Step 1 –Preheat the oven to 425 degrees F.
Step 2 –In a large skillet over medium heat, cook the bacon strips until they are crisp, about 6-8 minutes.
Step 3 –Transfer the cooked bacon to a paper-towel-lined plate, reserve the drippings in the pan, and let the bacon cool.
Step 4 –In a 9×13-inch baking dish, combine the cauliflower, the pepper, the salt, and the bacon drippings.
Step 5 –Roast the cauliflower mixture, stirring it twice, until it is tender, about 35 minutes.
Step 6 –While the cauliflower mixture is roasting, in a small bowl, combine 1 cup of the cheese, the sour cream, and 1/2 the scallions.
Step 7 –Stir the cheese mixture into the cauliflower mixture, and then sprinkle the top with the remaining cheese.
Step 8 –Bake the casserole until the cheese has melted, about 5-7 minutes.
Step 9 –Chop the cooled bacon.
Step 10 –Sprinkle the casserole with the bacon pieces and the remaining scallions.
Step 11 –Serve.
