5-Ingredient Beef Enchiladas

No joke and no lie, 5-Ingredient Beef Enchiladas only need 5 ingredients to start wowing your taste buds! Each warmed tortilla is filled with vibrant salsa, tangy and spicy enchilada sauce, and of course meaty, savory ground beef! Oh, and cheese… melty, creamy cheese. You know, the good stuff. Mmmm… 5-Ingredient Beef Enchiladas make enough for everyone, which is lucky, cause these rolls of rollicking deliciousness tend to disappear fast!

Ingredients

  • 1 pound lean ground beef
  • 1 cup chunky salsa
  • 1 (10-ounce) can red enchilada sauce, divided
  • 8 (8-inch) tortillas
  • 2 cups Mexican four-cheese blend, shredded, divided

Directions

Step 1 –Preheat the oven to 350 degrees F.

Step 2 –Lightly coat a 9×13-inch baking dish with nonstick cooking spray.

Step 3 –In a large skillet over medium-high heat, add the ground beef and cook, while crumbling, until it is no longer pink, about 5-7 minutes.

Step 4 –Drain the fat from the skillet.

Step 5 –Return the meat to the skillet and reduce the heat to medium-low.

Step 6 –Stir in the salsa and cook until heated through.

Step 7 –Transfer the skillet from the heat.

Step 8 –Pour about 1/2 of the enchilada sauce in the bottom of the prepared baking dish.

Step 9 –Warm the tortillas according to the package directions.

Step 10 –Add about 1/4 cup of the meat mixture down the center of each of the tortillas and top the meat with about 1 heaping tablespoon of the shredded cheese.

Step 11 –Tightly roll each tortilla up and place them in the prepared baking dish, seam-side down.

Step 12 –Pour the remaining enchilada sauce over the rolled tortillas and sprinkle the remaining cheese over the top.

Step 13 –Tightly wrap the dish with aluminum foil and bake until everything is heated through, about 30-35 minutes.

Step 14 –Serve.
